We are seeking an experienced Sous Chef for our client in a thriving hotel in County Laois. This is an exciting opportunity to play a leading role in a dynamic kitchen team known for delivering high standards across multiple outlets including restaurant, banqueting, and room service.
Responsibilities

Support the Head Chef in overseeing all kitchen operations, including menu planning, food preparation, and staff supervision

Lead and mentor the kitchen brigade, ensuring performance, productivity, and development

Maintain presentation and quality standards across all food service points

Ensure compliance with HACCP, hygiene, and food safety regulations
-
Work with procurement and stock teams to control inventory and reduce waste
-
Contribute creatively to menu development, including seasonal and dietary-specific dishes
-
Uphold a safe and efficient working environment and enforce hotel standards

Act as senior kitchen lead in the Head Chef’s absence
Requirements

Culinary degree or relevant professional training

Minimum 5 years’ experience in high-volume or fine dining kitchens

At least 2 years in a Sous Chef or senior kitchen role

Previous hotel kitchen experience is highly desirable

Strong leadership and kitchen management skills

Excellent understanding of budgeting, food costing, and inventory control

High attention to detail and strong organisational skills

Ability to thrive under pressure and lead during busy service periods
