Sous Chef

We are recruiting for our client in the South Dublin area for a Sous Chef to join the team at the 4 star property. The Sous Chef will play a vital role at supporting the Head Chef by managing daily operations, supervising kitchen staff, overseeing food prep and quality, controlling inventory, handling ordering, and ensuring strict health/safety/hygiene standards are met; they also train junior staff and run the kitchen in the Head Chef’s absence. Key duties include menu development, creating recipes, scheduling, expediting orders, managing supplies, and maintaining high standards for food presentation and consistency.

Leadership & Supervision:Directing kitchen staff, training new hires, scheduling shifts, and maintaining discipline.

Kitchen Operations:Managing daily food prep, ensuring smooth workflow, expediting orders, and troubleshooting issues.

Menu & Quality Control:Assisting in menu creation, developing recipes, identifying allergens, and ensuring high standards for taste and presentation.

Inventory & Ordering:Tracking stock, ordering supplies, managing suppliers, and controlling food costs.

Compliance:Upholding all health, safety, and hygiene regulations (H.A.C.C.P).

Administrative:Handling paperwork, managing budgets, and sometimes participating in food tastings.
