Senior Chef de Partie

Salary: €36k

Location: Kildare

Duties & Responsibilities:

  • Manage and lead a section of the kitchen with minimal supervision.
  • Ensure all dishes are prepared and presented according to hotel standards and in a timely manner.
  • Train, mentor, and support Commis Chefs and Demi Chefs de Partie.
  • Assist in planning and executing daily menus, specials, and seasonal dishes.
  • Work closely with the Sous Chef to maintain stock levels, reduce waste, and control food costs.
  • Ensure strict compliance with health and safety, food hygiene, and kitchen cleanliness standards (HACCP).
  • Participate in kitchen briefings and contribute creative ideas for new dishes and improvements.
  • Cover other sections as needed in the absence of other chefs.
  • Maintain excellent communication with the kitchen and front-of-house teams.

 

Candidate:

  • Minimum of 3–4 years of experience in a high-quality kitchen, preferably in a hotel or bistro-style restaurant.
  • Relevant culinary qualifications (e.g., NVQ Level 2 or 3 in Professional Cookery).
  • Strong cooking skills with a passion for fresh, seasonal ingredients and modern European cuisine.
  • Proven ability to lead a team and train junior kitchen staff.
  • Excellent time management and organizational skills.
  • Ability to work under pressure in a fast-paced environment.
  • Sound knowledge of food safety regulations and allergen management.
