I am delighted to be recruiting on behalf of my client for a Head Chef for their hotel in the Wicklow area. They are seeking a head chef who leads all kitchen operations, creating menus, managing food costs (GP), and mentoring the culinary team to deliver high-quality food for restaurants, bars, and banquets.

Key Responsibilities
  • Culinary Leadership: Lead, motivate, and mentor the kitchen brigade, fostering a positive, professional, and performance-driven culture.
  • Menu Development: Create and update menus that blend modern and traditional, incorporating seasonal ingredients.
  • Operations Management: Oversee day-to-day operations, ensuring consistency across 1863 Lounge, bar, breakfast, and event services.
  • Financial Control: Manage food costs, GP (Gross Profit) margins, and inventory to ensure profitability.
  • Compliance & Hygiene: Ensure full compliance with Haccp and food safety regulations.
  • Supplier Relations: Manage relationships with food suppliers to ensure quality and cost-effectiveness.
