Head Sommelier

A luxury hotel with a strong food and beverage offering is seeking an experienced Head Sommelier to lead its wine programme. This role is central to the guest experience, combining deep wine knowledge with service leadership, cellar management, and close collaboration with senior culinary and F&B teams.

Your Responsibilities

  • Lead and manage the hotel’s wine programme across all dining outlets

  • Curate, develop, and maintain wine lists aligned with a luxury dining experience

  • Deliver expert wine service and recommendations to guests

  • Train and mentor FOH teams on wine knowledge, service standards, and upselling

  • Manage cellar organisation, stock levels, purchasing, and cost control

  • Work closely with chefs and F&B leadership on menu pairings and events

  • Support wine tastings, private dining, and special functions

Requirements

  • Proven experience as a Sommelier or Head Sommelier in a hotel or fine-dining environment

  • WSET level 3
  • Strong knowledge of international wines, regions, and service standards

  • Experience managing wine lists, suppliers, and cellar operations

  • Confident communicator with a guest-focused service style

  • Ability to lead training and maintain high standards across teams

Salary & Benefits
