This magnificent estate is celebrated for its world-class hospitality and diverse culinary portfolio. Catering to an international and local clientele, the property features multiple distinct dining outlets—ranging from fine dining to relaxed luxury—alongside a sophisticated banqueting operation that hosts high-profile events, bespoke weddings, and conferences.
This role offers the ultimate platform for culinary leadership, providing the state-of-the-art facilities and premium local ingredients necessary to execute cutting-edge gastronomic concepts on a grand scale.
Key Responsibilities

Culinary Leadership: Oversee daily kitchen operations across multiple dining outlets, ensuring the highest standards of food preparation, presentation, and consistency.

Event Excellence: Manage the seamless execution of high-volume, luxury banqueting for prestigious conferences, grand weddings, and exclusive private events.

Menu Development: Collaborate on the creation of innovative, seasonally driven menus that showcase the very best of County Clare’s local produce.

Team Mentorship: Inspire, train, and develop a large, multi-disciplinary kitchen brigade, fostering a collaborative and high-performing kitchen culture.

Operational Management: Maintain strict oversight of food safety (HACCP), inventory management, portion control, and kitchen profitability.
Candidate Profile

A proven track record as a Senior Sous Chef or Executive Sous Chef within a 4/5-star luxury hotel or a high-volume, multi-outlet culinary environment.

Deep expertise in managing both high-end a la carte dining and complex, large-scale banqueting operations.

A strong, motivational leader with a warm, professional demeanor and excellent organizational skills.
