I am delighted to be recruiting on behalf of my client in the centre of Kilkenny city for an experienced Sous Chef to join their team. The property is a well-known hotel and the right candidate must be a well-rounded chef that works well within a team and off their own initiative.

Job Purpose
The Sous Chef will support the Head Chef in the day-to-day running of the kitchen, ensuring the consistent delivery of high-quality food in a fast-paced, high-volume environment. The Sous Chef acts as the “second in command,” managing the team in the Head Chef’s absence. 
Key Responsibilities
  • Operational Leadership: Manage daily kitchen operations, food preparation, and plating, maintaining high quality and hygiene standards.
  • Team Management: Train, lead, and schedule kitchen staff while ensuring compliance with HACCP and safety protocols.
  • Culinary Contribution: Assist with menu development and creating daily specials.
  • Inventory Control: Monitor stock levels, support ordering, and coordinate with suppliers.

Ideal Candidate Requirements
  • Experience: Proven experience (typically 2+ years) in a similar high-volume, fast-paced kitchen environment.
  • Skills & Attributes: Strong leadership, culinary, and organisational skills; ability to remain calm under pressure and passionate about food.
  • Qualifications: Valid HACCP / Food Safety certification.
