Introduction

We are seeking an experienced Senior Pastry Chef to join the culinary team at a luxury 4-star Hotel. This is a busy property with high-volume day and evening trade, weddings, banquets, and corporate functions. The Senior Pastry Chef will take ownership of the pastry section, delivering homemade bakes for breakfast and afternoon service, alongside refined plated desserts for the restaurant and large-scale events. This is a hands-on role in a fast-paced environment that demands creativity, consistency, and excellent organisation.

Responsibilities

As Senior Pastry Chef, your main duties will include:

  • Leading all pastry, bakery, and dessert production across breakfast, afternoon service, dinner, and functions

  • Creating and presenting high-quality homemade bakes, plated desserts, and seasonal specials

  • Supporting weddings, banquets, and events with dessert stations and function menus

  • Managing the pastry team, training junior staff, and ensuring consistency and quality

  • Controlling stock, ordering, and maintaining food cost targets

  • Upholding HACCP, allergen, and hygiene standards at all times

Requirements

To be successful as Senior Pastry Chef, you should demonstrate:

  • Proven experience as a Pastry Chef or Senior Pastry Chef in a busy hotel or fine-dining environment

  • Strong technical pastry skills including baking, chocolate work, sugar work, and plated dessert design

  • Ability to manage high-volume production for both day-to-day service and large events

  • Leadership and mentoring skills to guide a pastry team

  • Excellent organisational and time-management abilities

  • Flexibility to work mornings, evenings, weekends, and functions as required
