Senior Chef de Partie
Salary: €36k
Location: Kildare
Duties & Responsibilities:
- Manage and lead a section of the kitchen with minimal supervision.
- Ensure all dishes are prepared and presented according to hotel standards and in a timely manner.
- Train, mentor, and support Commis Chefs and Demi Chefs de Partie.
- Assist in planning and executing daily menus, specials, and seasonal dishes.
- Work closely with the Sous Chef to maintain stock levels, reduce waste, and control food costs.
- Ensure strict compliance with health and safety, food hygiene, and kitchen cleanliness standards (HACCP).
- Participate in kitchen briefings and contribute creative ideas for new dishes and improvements.
- Cover other sections as needed in the absence of other chefs.
- Maintain excellent communication with the kitchen and front-of-house teams.
Candidate:
- Minimum of 3–4 years of experience in a high-quality kitchen, preferably in a hotel or bistro-style restaurant.
- Relevant culinary qualifications (e.g., NVQ Level 2 or 3 in Professional Cookery).
- Strong cooking skills with a passion for fresh, seasonal ingredients and modern European cuisine.
- Proven ability to lead a team and train junior kitchen staff.
- Excellent time management and organizational skills.
- Ability to work under pressure in a fast-paced environment.
- Sound knowledge of food safety regulations and allergen management.
