Executive Sous Chef – 5* Hotel

Wicklow, Full Time

We are currently recruiting for an Executive Sous Chef for our client, a beautiful 5* property in Wicklow.

This property can assist with accommodation and relocation if required.

Key responsibilities:

  • Assist in the design and delivery of new menu concepts 
  • Manage and oversee the smooth running of the day to day operation in the kitchen
  • Maintain consistently high standards and quality across all areas of the food operation
  • Understand the budget and work to the agreed targets on food cost, labour hours, sundries and wastage
  • Recruitment, training and retention of team members
  • To set personal and department objectives for direct reports and to monitor and review on a regular basis
  • Review staffing levels to ensure that guest service, operational needs and financial objectives are met
  • Maintains purchasing, receiving and food storage policies and procedures.

The Ideal Candidate:

  • Previous experience as Head Chef or Sous Chef in a 5* Hotel
  • Experience in a Michelin starred property would be advantageous
  • Management and organisational skills are essential
  • Eligibility to work in Ireland.
