Salary: €55-65k + bonus

Duties & Responsibilities:

• Monitor and control costs, ensuring the business operates within budgetary guidelines.
• Be financially astute with a strong understanding of Gross Profit (GP) margins and strategies to maximize profitability.
• Manage stock levels effectively to minimize waste while ensuring a consistent supply of products.
• Analyze sales figures and performance data to identify areas for improvement.
• Monitor and maintain optimal labour percentages, ensuring staffing levels are appropriate for peak and off-peak periods.
• Prepare weekly rosters to meet business needs while adhering to labour cost targets.
• Conduct regular staff training and development sessions to ensure the highest standards of service and compliance with health & safety regulations.
• Foster a positive, collaborative work environment with open communication.
• Handle staff recruitment, onboarding, and performance reviews.
• Handle customer inquiries, complaints, and feedback in a professional manner.
• Maintain the highest standards of cleanliness, hygiene, and safety across the venue.
• Oversee venue set-up for special events and ensure compliance with licensing laws.
• Proven track record of managing GP margins, labour costs, and budgets to deliver profitability.
• Demonstrated ability to manage and motivate a diverse team in a high-pressure environment.
• Strong decision-making skills and ability to troubleshoot operational issues effectively.
• A commitment to providing exceptional customer service and enhancing the guest experience.
• Willingness to work late nights, weekends, and holidays as required by the business.
